Ingredients

1 -2 cup cooked beef or 1 -2 cup pork roast , shredded
1 tablespoon oil
1 onion , diced
1 green pepper , diced
1 can black beans , rinsed and drained
1 can diced tomatoes and green chilies

9 corn tortillas

Instructions

1.Preheat oven to 350°F.

10.Bake for 25-30 minutes or until everything is hot and bubbly. Remove the foil and bake for another 5 minutes to brown the cheese.
