Ingredients

1 cup dried black beans ( or 2 cans black beans )
6 cups water
2 cups cooked pork ( left over CHOPPED pork , chicken , or beef )
1 cup frozen sweet corn
1 cup salsa
1 small onion
4 tablespoons tomato paste
1 tablespoon mild chili powder
1 tablespoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt ( or to taste )
garnish with shredded cheese and sour cream
This hearty and flavorful soup combines the leftover meat and produce that may often go unused in your fridge. Instructions

1.Rinse and soak black beans overnight in water. Drain the soaking water and rinse them once more.
2.In a large pot, add beans and 6 cups fresh water and bring to a boil. Then reduce the heat and simmer until the beans are tender.
3.In a different pot, saute the diced onion over medium heat, until softened.
4.Add tomato paste, chili powder, cumin, garlic powder, onion powder, and salt to the sauteed onions. Cook for another 2 minutes and add to the pot of black beans.
5.Next, stir in leftover pork, salsa, and sweet corn in the bean mixture.
6.Bring the soup mixture to a boil, then reduce the heat to low and simmer for 30-45 minutes.
7.Once your soup is ready, ladle it into bowls and garnish with shredded cheese and sour cream.
