4 large baking potatoes , peeled and diced

4 ounces blue cheese ( plus 2 tbls . for garnish )
sea salt & freshly ground black pepper
1 slice red apple ( to garnish )

Instructions

1.Wash and slice leeks (white and light green parts only).
2.Melt butter in a large pot over medium heat. Add garlic, shallots/onion, and diced onion and cook until softened, about 5 minutes.
3.Add leeks and apples to the pot and cook until slightly softened, about 5 minutes.
4.Add sherry and apple cider to the pot and bring to a boil. Reduce heat and simmer for 10 minutes.
5.Add diced potatoes and vegetable/chicken stock and bring to a boil. Reduce heat and simmer until potatoes are tender, about 20 minutes.
6.Puree soup until smooth, either using an immersion blender or transferring to a blender in batches. Return soup to pot.
7.Stir in heavy cream and 4 ounces of blue cheese until cheese is melted and soup is heated through.
8.Season with salt and pepper to taste.
9.To serve, ladle soup into bowls and garnish with additional blue cheese and a slice of red apple.
