Ingredients

3 leeks , finely chopped ( white and light green parts only )
4 slices bacon
1 pastry for double-crust pie
1 teaspoon fresh sage , finely chopped
1 egg , beaten
salt , to taste
pepper , to taste
Leek Pasty (Pastai Cennin) is a Welsh dish that dates back to the mining era. Miners would often take pasties with them for lunch as they were easily transportable and filling. Instructions

1.In a large frying pan, cook the bacon over medium heat until crispy. Remove and set aside.

3.Preheat the oven to 375°F. Roll out the pastry on a floured surface into a rectangle shape.

5.Brush the edges of the square with beaten egg, then fold the other half of the pastry over the leek filling and crimp the edges together to seal.
6.Brush the tops of the pasties with the remaining egg and bake for 20-25 minutes until golden brown.
