Ingredients

4 medium potatoes or 800 g potatoes
40 g butter
1/4 cup milk
1 teaspoon brown sugar
1 tablespoon vegetable oil
1 small leek , finely sliced
250 g mushrooms
4 garlic cloves , minced
1 tablespoon fresh thyme , finely chopped
2 tablespoons dry white wine
Leek, Mushroom & Thyme Mashed Potatoes are a great way to take mashed potatoes to the next level. Instructions

1.Peel potatoes and cut them into quarters. Boil them in salted water until they are soft, for roughly 20 minutes
2.Drain and mash the potatoes with butter, milk and sugar.
3.While your potatoes are boiling, heat oil in a pan and cook sliced leek and mushrooms. Add garlic, thyme and white wine. Cook until the mushrooms are soft.
4.Serve the mashed potatoes with the mushroom and leek mixture on top.
