Leek Fritters (Prassokeftedes) are a Greek and Mediterranean dish that can be found in many traditional tavernas and restaurants. They are made with simple ingredients such as potatoes, leeks, eggs and breadcrumbs and seasoned with fragrant oregano leaves. These fritters are a great way to enjoy the mild, onion-like flavor of leeks, and can be made ahead of time and fried on the spot or served cold as a snack. Serve these fritters as a side dish to grilled meat or fish, or enjoy them on their own as a vegetarian snack.

Instructions

1.Boil the cubed potatoes until tender, then drain them well and mash them in a large bowl.
2.Add the sliced leeks, beaten eggs, breadcrumbs, salt, pepper and oregano leaves to the same bowl.
3.Mix everything thoroughly, cover and chill in the fridge for 30 minutes to firm up.
4.Heat some olive oil in a large frying pan, gently drop spoonfuls of the mixture into the pan and flatten them slightly with the back of the spoon.
5.Fry the fritters for 3-4 minutes on each side until golden brown and crispy, then transfer them onto some kitchen paper to get rid of any excess oil.
6.Serve the fritters hot or cold as a tasty snack or side dish.
