Ingredients

1 tablespoon olive oil
75 g chorizo sausage , roughly chopped
4 large leeks , thinly sliced
3 garlic cloves , sliced
100 ml dry sherry
2 cans butter beans , drained
500 ml vegetable stock
3 ounces bread , torn into pieces
Leek, Butter Bean and Chorizo Gratin is a dish that's both comforting and hearty. The leeks and butter beans provide a deliciously savoury base, while the chorizo adds a smoky and slightly spicy flavour to the dish. Instructions

1.Preheat the oven to 200C/180C fan/gas 6.
2.In a large frying pan, heat the olive oil over medium-high heat.
3.Add the chorizo and cook for 2-3 minutes until beginning to crisp.
4.Add the leeks and garlic and cook for a further 5 minutes until the leeks are softened.
5.Pour in the sherry and simmer until reduced by half.
6.Add the butter beans and stock and bring to a simmer.
7.Transfer the mixture to a large gratin dish.
8.Scatter over the torn bread and bake in the oven for 25 minutes until golden and bubbling.
