Ingredients

2 large leeks , washed and chopped
1 potato , peeled and diced into 1/2in pieces ( about 8oz )
3 1/4 cups vegetable broth
4 tablespoons fresh parsley , finely chopped
1 can borlotti beans , drained and rinsed

Instructions

1.Heat the olive oil in a large saucepan over medium-low heat.

4.Add the vegetable broth to the pan and bring to a boil. Reduce the heat and simmer for 15-20 minutes until the potatoes are completely soft.

6.Simmer for an additional 5-10 minutes until the beans are heated through.
7.Use an immersion blender or transfer the soup to a blender and puree until smooth. Season with salt and pepper to taste.
