Ingredients

1/2 cup bulgur
1 1/4 lbs lean ground turkey
1 medium onion , finely chopped ( about 1/2 c )
3 garlic cloves , minced ( about 1 T . )
1 tablespoon finely chopped of fresh mint
2 teaspoons ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground mustard
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
2 tablespoons chopped fresh cilantro or 2 tablespoons flat leaf parsley
Lebanese kebabs are a popular meal in Mediterranean cuisine. Instructions

1.Pour 1 cup of boiling water over bulgur in a small bowl, stir and let stand for 30 minutes.
2.Add turkey, onion, garlic, mint, cumin, coriander, mustard, salt, pepper and cilantro to a large bowl, mix gently but thoroughly.
3.Take about 1/4 cup of turkey mixture and shape onto 8 skewers.
4.Preheat grill to medium-high heat.
5.Grill skewers for about 10-12 minutes, or until the meat is fully cooked.
