2 small aubergines
1 garlic clove , crushed
4 tablespoons tahini paste
1/4 cup ground almonds
1/2 lemon , juice of
1/2 teaspoon cumin
2 tablespoons of fresh mint
2 tablespoons olive oil
salt
fresh ground pepper
fresh thyme sprig ( to garnish )

Instructions

1.Preheat your oven to 425°F.
2.Cut the aubergines in half lengthwise and slice a few shallow slits on the flesh side.
3.Brush the sliced side with olive oil and sprinkle with salt and pepper.
4.Roast the aubergines, flesh side up, on a baking sheet for about 30 minutes or until the skin is charred and the flesh is soft.
5.Let the aubergine cool, then scoop out the flesh and place it into the bowl of a food processor along with the tahini, garlic, lemon juice, ground almonds, cumin, mint, a tablespoon of olive oil, and a pinch of salt and pepper.
6.Process until smooth, scraping down the sides of the bowl with a spatula and adding more salt and pepper as needed.
7.Transfer the Baba Ghanoush to a serving dish and garnish with fresh mint and a sprig of thyme.
8.Serve with pita bread or chips. Enjoy!
