6 cups cold water

8 -10 leaves swiss chard , washed , stems removed , cut down the middle and shredded
1 large onion , chopped
4 garlic cloves , crushed
1/4 cup cilantro , chopped
salt & pepper
1/4 cup lemon juice
lemon wedge ( to garnish )

Instructions

1.Rinse lentils in cold water and drain.
2.In a large pot, bring lentils and 6 cups of cold water to a boil.
3.Reduce heat, cover the pot, and simmer for 30-40 minutes, until the lentils are cooked.
4.While the lentils are cooking, heat olive oil in another pot over medium heat.
5.Add onions and garlic, and cook for 5 minutes until the onions are translucent.
6.Add swiss chard and cilantro, stirring occasionally for another five minutes.
7.Once the lentils are cooked, add them to the pot with the swiss chard mixture.
8.Add salt and pepper to taste.
9.Given that everything is mixed, cook the pot for an additional few minutes.
10.Finally, stir in the lemon juice and taste again, serving with a lemon wedge on top for added garnish.
