Ingredients

2 1/2 cups chicken stock
1 can beets , shredded ( can use Jewish borscht too )
2 medium potatoes
1 package coleslaw mix
1 small onion
2 -3 tablespoons tomato paste
2 tablespoons bacon bits
2 tablespoons oil
1 tablespoon lemon juice
1 dash salt ( to taste )
5 -6 black peppercorns
1 dash pepper ( to taste )
1 garlic clove
dill ( as a garnish )
Lazy Borscht is a quick and easy vegetarian version of the traditional Ukrainian Borscht soup. It is made with shredded beets, diced potatoes, coleslaw mix, chopped onion, tomato paste, bacon bits, oil, lemon juice, salt, black peppercorns and garlic. It is perfect for a busy weeknight when you don't have a lot of time to cook, but still want a healthy and flavorful meal. This soup is rich in vitamins and minerals from the beets, potatoes and coleslaw mix, making it a great choice for a nutritious and delicious dinner.

Instructions

1.In a large pot, combine chicken stock, shredded beets, diced potatoes, coleslaw mix, chopped onion, tomato paste, bacon bits, oil, lemon juice, salt, black peppercorns and garlic.
2.Bring to a boil over medium heat, then reduce to low and simmer for 30-40 minutes.
3.Serve hot with a sprinkle of dill on each bowl.
