Ingredients

3 teaspoons olive oil
1/4 cup chopped onion
1 lb ground beef
1 package taco seasoning
3/4 cup water
2 1/2 cups canned crushed tomatoes
1 1/2 cups corn kernels
2/3 cup yellow cornmeal
8 corn tortillas
3 cups shredded cheddar cheese or 3 cups Mexican blend cheese

Instructions

1.Preheat the oven to 375°F.

4.Add taco seasoning and water to the skillet. Stir and let it simmer for 5 minutes.

7.In a separate bowl, mix cornmeal with 3/4 cup water and 2 teaspoons olive oil.
8.Cut the corn tortillas into bite-sized pieces.
9.Take a 9x13 inch baking dish. Spread a layer of cornmeal mixture on the bottom of the dish.
10.Add a layer of tortilla pieces.
11.Add half of the meat mixture on top of the tortilla layer.
12.Add a layer of cheese on top of the meat mixture.
13.Repeat layers with remaining tortilla pieces, meat mixture, and cheese.
14.Cover the dish with foil.
15.Bake for 25-30 minutes.
16.Remove the foil from the dish and bake for an additional 5-7 minutes or until the cheese is melted and bubbly.
17.Remove it from the oven and let it rest for 5-10 minutes before serving.
