400 g red kidney beans , drained and rinsed
400 g corn , drained
2 red capsicums , diced ( I used oven roasted jarred ones )
300 g salsa ( I used mild capsicum )
1 small red onion , diced finely
1/2 cup pitted black olives ( I used kalamata )
3 cups diced tomatoes
2 cups grated cheddar cheese
4 slices bacon , diced and cooked crispy
corn chips , to serve

Instructions

1.In a small bowl, combine the low-fat mayonnaise, low-fat sour cream, lime juice, lime zest, chopped coriander, cumin powder, Tabasco sauce, salt, and freshly ground black pepper to make the dressing.
2.In a large glass serving bowl, layer the shredded lettuce, red kidney beans, corn, diced red capsicums, salsa, finely diced red onion, pitted black olives, diced tomatoes, grated cheddar cheese, and crispy bacon.
3.Pour the dressing over the top of the salad and chill in the refrigerator for at least 1 hour.
4.Serve the salad with corn chips on top and enjoy!
