Ingredients

2 cups whole milk
1/2 cup sugar
1 tablespoon chopped fresh lavender or 1 1/2 teaspoons dried lavender , crumbled
3 eggs
2 egg yolks
2/3 cup sugar
3 -4 drops fresh lemon juice
2 tablespoons water
1 pint fresh strawberries , hulled and quartered
6 fresh mint leaves
Lavender Flan is a unique take on the traditional Spanish dessert. Flan is a custard-like dish made from eggs, milk, and sugar, and is usually served with a caramel sauce. This version adds fresh lavender to the mix, giving it a sweet, floral flavor that pairs perfectly with fresh strawberries and mint. Instructions

1.Preheat your oven to 325°F.
2.In a medium saucepan, combine the milk, 1/2 cup sugar, and lavender, and heat over medium heat. Stir occasionally until sugar dissolves, then remove the pan from heat and let the mixture sit for 10 minutes.
3.In a large bowl, whisk together the eggs, egg yolks, and 2/3 cup sugar until thoroughly combined. Stir in the lemon juice and water.
4.Slowly pour the milk mixture into the egg mixture, whisking constantly. Strain the mixture into a jug.
5.Pour the mixture evenly into 6 ramekins and place them in a large baking dish. Add hot water to the baking dish until it reaches halfway up the ramekins.
6.Bake for 35-45 minutes, or until set. Remove from the oven and let cool slightly.
7.Chill in the refrigerator for at least 2 hours or overnight.
8.To serve, top each flan with fresh strawberries and garnish with fresh mint leaves.
