1 shallot , minced
1/4 cup aged balsamic vinegar
1 whole roasting chicken ( chicken pieces , or smaller poultry such as a poussin , quail or cornish hen )

Instructions

1.Preheat oven to 375°F (190°C).
2.In a small bowl, mix together the thyme, rosemary, lavender, honey, marjoram, minced garlic, minced shallot, and balsamic vinegar until well combined.
3.Pat the chicken dry with paper towels, then place it breast side up in a roasting pan.
4.Rub the herb and honey mixture all over the chicken and in the cavity.
5.Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until a thermometer inserted into the thickest part of the chicken registers 165°F (74°C).
6.Remove the chicken from the oven and let it rest for 15-20 minutes before carving and serving.
7.Drizzle any pan drippings and glaze over the chicken before serving.
