3 lbs pork loin
1 onion ( chopped )
1 green pepper ( chopped )

1 can tomato sauce
1 bottle Corona beer
1 lime , juice of
1 can Rotel Tomatoes
1/4 cup pickled jalapeno chili ( see note below )
1 cup salsa
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon crushed red pepper flakes ( optional )
1 teaspoon hot sauce ( optional )

Instructions

1.In a large pan, brown pork loin in olive oil on high heat.
2.Add onion, green pepper, and garlic cloves to the pan. Cook for a few minutes until softened.
3.Add tomato sauce, lime juice, Corona beer, Rotel Tomatoes, pickled jalapeno chili, salsa, chili powder, cumin, red pepper flakes, and hot sauce to the pan. Mix well.
4.Lower the heat to low, cover the pan, and let simmer for at least 2-3 hours.
5.Once the pork has cooked, pull it apart using a fork or tongs. Mix the pulled pork with the sauce.
6.Serve hot with tortillas, rice, or your favorite sides!
