Ingredients

4 -5 lbs beef , brisket . 1st cut
1/2 cup flour
coarse salt
fresh ground black pepper
vegetable oil , as needed
2 large garlic cloves , minced
2 -3 tablespoons cider vinegar
2 -3 tablespoons dark brown sugar
16 ounces tomato sauce ( Rao 's brand is very good )
2 -3 tablespoons ketchup
1 tablespoon Worcestershire sauce
6 ounces chili sauce
3/4 - 1 cup water , boiling
2 bay leaves
1/2 - 3/4 teaspoon dried thyme , crushed
2 -3 onions , Bermuda variety is nice and so is Spanish , cut into 1/2 inch slices
carrot ( optional )
potato , red bliss ( optional )

Instructions

1.Preheat oven to 375°F.
2.On a plate mix flour, coarse salt and freshly ground black pepper.
3.Dredge brisket in flour mixture.
4.Heat oil in a large dutch oven, brown brisket on both sides.
5.Remove brisket, sauté garlic in same oil until golden.
6.Add cider vinegar, brown sugar, tomato sauce, ketchup, Worcestershire sauce, chili sauce, boiling water, bay leaves, and thyme.
7.Stir until well combined, then add onions, carrot and potato.
8.Return brisket to pan and spoon some of the sauce and onion mixture over it.
9.Cover with a tight-fitting lid and bake in the oven for 3 hours or until meat is tender.
10.Let brisket rest for 20 minutes before carving it across the grain into thin slices.
