Instructions

1.In a large mixing bowl, combine flour, yeast, salt, malt extract, butter, and milk-water mixture. Knead the dough until it is smooth and elastic.
2.Cover the dough and let it rest in a warm place for about an hour until it doubles in size.
3.Preheat the oven to 220°C.
4.In a large pot, bring water and salt to a boil.
5.Divide the dough into 12-16 even balls and shape them into rolls.
6.Carefully add the bicarbonate of soda to the boiling water and reduce the heat to low.
7.Place the rolls, one at a time, into the boiling water and cook for 20 seconds on each side.
8.Remove the rolls from the water and place them on a baking sheet lined with parchment paper.
9.Sprinkle the rolls with coarse salt and bake for 12-15 minutes or until golden brown.
