2 cups white rice
3 cups chicken stock
1 teaspoon poultry seasoning

1 cup tomato sauce
1 cup Spanish olives with pimento , drained and chopped
2 tomatoes , seeded and chopped
1 small green bell pepper , seeded and chopped
1 small white onion , chopped
3 drops hot sauce
1/4 cup chopped fresh flat-leaf parsley
1/2 lime , juice of
salt
2 ripe avocados , pitted and spoon flesh from skins
1/2 lime , juice of
1 garlic clove
1 cup sour cream

Instructions

1.In a large pot, heat olive oil and butter over medium heat.
2.Add chicken breast and cook until browned, then remove from pan.
3.Add rice to the pot and stir until coated with remaining oil and butter.
4.Add chicken stock, poultry seasoning, sazon goya or fajita seasoning mix, tomato sauce, Spanish olives with pimento, tomatoes, green bell pepper, white onion, hot sauce, parsley, lime juice, and salt.
5.Stir well and bring to a boil.
6.Reduce heat to low, cover, and simmer for 25 minutes or until rice is tender.
7.While rice cooks, make avocado cream. In a blender, combine avocado flesh, lime juice, garlic, sour cream, and salt. Blend until smooth.
8.Serve rice pot hot with avocado cream on top.
