Ingredients

1 lb lasagna noodle
14 ounces mozzarella cheese ( diced )
4 ounces parmigiano-reggiano cheese
12 ounces ground beef
12 ounces ground pork
200 g pancetta
4 tablespoons extra virgin olive oil
1 large white onion , chopped
2 large garlic cloves ( chopped , I double this )
630 g italian chopped tomatoes
6 tablespoons tomato puree
6 fluid ounces red wine
whole nutmeg
salt
fresh ground black pepper
15 g fresh basil
6 cups milk
6 ounces butter
4 ounces flour
salt

2 large garlic cloves , minced
6 fluid ounces heavy cream or 6 fluid ounces double cream

Instructions

1.Preheat oven to 375 degrees F.
2.In a large skillet, cook beef, pork, and pancetta over medium heat until browned, stirring frequently.

5.Stir in tomatoes, tomato puree, red wine, and grated nutmeg.

9.Drain and set aside.
10.In a separate pot, melt butter over medium heat.
11.Whisk in flour until smooth.
12.Gradually whisk in milk, garlic, salt, and pepper.
13.Bring to a boil, whisking constantly.
14.Reduce heat and simmer for 10-15 minutes, or until thickened.
15.Stir in grated Parmigiano-Reggiano cheese and cream.
16.To assemble, spread 1/3 of the meat sauce in a 9x13 inch baking dish.
17.Cover with a layer of noodles followed by a layer of the cheese sauce.
18.Repeat layers until all ingredients are used up, ending with cheese sauce.
19.Sprinkle diced mozzarella cheese and basil over the top.
20.Bake in preheated oven for 45-50 minutes, or until bubbly and golden brown on top.
