Ingredients

1 lb sweet Italian sausage , cooked with out casing and crumbled
1 large chicken breast half , cooked and chopped
1 medium sweet onion , chopped and cooked in olive oil
3 grated garlic cloves
3/4 cup dry red wine , i used a mixed red wine
1 3/4 cups water
1 can tomato paste
1 can diced petite tomatoes , drained
2 stalks celery , chopped finely
2 carrots , shredded small
1 dash black pepper
1 teaspoon italian seasoning
1 teaspoon dried basil
1/3 cup melted butter
1/3 cup flour
1/2 teaspoon salt
1 dash nutmeg
3 cups half-and-half
2 cups mozzarella cheese
1 3/4 cups parmesan cheese
3 tablespoons dried parsley
1 lb lasagna noodle , partially cooked not soft . follow directions on the box

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.In a large pot over medium heat, cook Italian sausage and chicken until browned. Add onion and garlic, and cook until translucent.
3.Stir in red wine and cook for 2-3 minutes to reduce. Add water, tomato paste, and diced tomatoes.
4.Add celery, carrots, black pepper, Italian seasoning, and dried basil. Bring to a simmer and cook for 30 minutes.
5.In a separate saucepan, melt butter over medium heat. Add flour, salt, and nutmeg and cook for 1-2 minutes. Slowly whisk in half-and-half and cook over medium heat for 10-15 minutes, until thickened.
6.Spread a layer of meat sauce on the bottom of a pan. Layer cooked noodles, meat sauce, mozzarella cheese, parmesan cheese, and parsley. Repeat layers, finishing with a layer of meat sauce and sprinkling of parmesan cheese.
7.Cover with foil and bake for 25-30 minutes. Remove foil and bake for an additional 25-30 minutes until bubbly and golden brown. Let cool for 10-15 minutes before serving.
