Ingredients

1 lb lean ground beef
1 packet reduced-sodium taco seasoning
1 can diced tomatoes , drained and divided
1 bag frozen southwest blend vegetables ( corn , beans , peppers , onions )
1/2 cup salsa con queso
1 can enchilada sauce
5 flour tortillas
8 ounces mexican-blend shredded cheese
aluminum foil
1 container publix deli guacamole
Lasagna Mexicana is a delicious fusion of Mexican and Italian cuisine. This lasagna is loaded with seasoned ground beef, southwest blend vegetables, diced tomatoes, enchilada sauce, and salsa con queso, which gives it a spicy and delicious flavor. For added convenience, we've made this recipe with flour tortillas, which are also great to use if you're going gluten-free. It's a simple meal to cook that's bursting with color and flavor, and best of all, you can make it in under an hour!

Instructions

1.Preheat the oven to 375°F.
2.Brown the ground beef in a large skillet over medium-high heat. Drain any excess fat.
3.Add the taco seasoning, half of the diced tomatoes, and the frozen southwest blend vegetables to the skillet. Cook for 5 minutes or until the vegetables are heated through.
4.In a separate bowl, mix the enchilada sauce and the salsa con queso together.
5.Cover the bottom of a 9×13 inch baking dish with a layer of the enchilada sauce mixture. Place a layer of flour tortillas on top.
6.Spoon half of the meat mixture over the tortillas. Add another layer of tortillas and the remaining meat mixture on top.
7.Cover with another layer of tortillas and the remaining enchilada sauce mixture. Sprinkle the shredded cheese on top.
8.Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 5-10 minutes or until the cheese is melted and bubbly.
