1 lb seafood ( mix of shrimp , scallops , cod , salmon your choice )
3 cups milk
4 tablespoons butter
4 tablespoons flour
1 -2 teaspoon Old Bay Seasoning
1/2 teaspoon garlic powder
1 egg
1 tablespoon parsley
1/4 teaspoon black pepper
1/2 teaspoon Old Bay Seasoning
2 cups ricotta cheese
2 1/2 cups grated mozzarella cheese , divided
paprika
lemon , cut into small wedges

Instructions

1.Preheat the oven to 375°F. Grease standard-size muffin tins.
2.Combine the milk, butter, flour, Old Bay Seasoning, and garlic powder in a large saucepan. Cook over medium heat for 5-7 minutes or until the mixture thickens, stirring continuously.
3.In a mixing bowl, whisk together the egg, parsley, black pepper, Old Bay Seasoning, ricotta cheese, and 2 cups of shredded mozzarella cheese.
4.Line each muffin cup with a wonton wrapper, pressing it firmly into the bottom and up the sides. Spoon a tablespoon of the seafood mixture into each lined cup.
5.Spoon a tablespoon of the ricotta cheese mixture on top of the seafood mixture, then sprinkle the remaining 1/2 cup of shredded mozzarella cheese over the ricotta cheese.
6.Place another layer of wonton wrappers on top of the cheese, followed by another spoonful of the seafood mixture.
7.Top with another spoonful of ricotta cheese mixture and sprinkle with paprika.
8.Bake for 20-22 minutes or until lightly golden on top. Serve hot with a wedge of lemon.
