Ingredients

30 wonton wrappers
1 small eggplant , peeled and diced
1 small zucchini , diced
1 onion , diced
1 red bell pepper , diced
3 large button mushrooms , diced
6 garlic cloves , sliced
1 tablespoon dried herbs ( choice parsley , rosemary , oregano )
salt and pepper
1 cup homemade tomato sauce or 1 cup spaghetti sauce
1 egg
1 tablespoon chopped fresh cilantro or 1 tablespoon parsley
1/4 teaspoon black pepper
2 cups ricotta cheese
3 tablespoons grated parmesan cheese , divided
2 1/2 cups grated mozzarella cheese , divided
6 -12 basil leaves
Lasagna Cupcakes are a fun and creative way to enjoy traditional lasagna. By using wonton wrappers instead of pasta, these cupcakes are perfect for portion control and can be easily frozen for later use. Instructions

1.Preheat the oven to 375 degrees F.
2.Mix together the eggplant, zucchini, onion, bell pepper, mushrooms, garlic, herbs, salt, and pepper in a large bowl.
3.Roast the vegetables for about 25 minutes, or until they are tender and lightly browned.
4.In a separate bowl, mix the tomato sauce, egg, cilantro or parsley, black pepper, ricotta cheese, 2 tablespoons of the parmesan cheese, and 2 cups of the mozzarella cheese.
5.Grease a muffin tin and place a wonton wrapper in each cup. Spoon a tablespoon of the cheese mixture into each cup, and then top with a spoonful of the roasted vegetables. Repeat the layers, ending with a layer of cheese mixture.
6.Sprinkle the remaining 1 tablespoon of parmesan cheese and 1/2 cup of mozzarella cheese over the top of the lasagna cups.
7.Bake for 20-25 minutes, or until the cheese is melted and bubbly. Let cool for a few minutes before serving.
