6 egg whites , room temperature
15 egg yolks , room temperature
250 icing sugar

1/4 teaspoon ground ginger

Instructions

1.Preheat the oven to 160°C.
2.Grease and line a 20 cm square baking tray with baking paper.
3.In a bowl, whisk the egg whites until stiff peaks form. Set aside.
4.In another bowl, whisk the egg yolks, icing sugar, and vanilla extract until pale and creamy. Set aside.
5.In a separate large mixing bowl, beat the butter until creamy. Add the egg yolk mixture gradually and beat until well combined.
6.Sift in the flour, baking powder, and spices and mix using a spatula until smooth.
7.Gently fold in the beaten egg whites until the batter is light and airy.
8.Pour 1/2 cup of batter into the prepared baking tray and spread it evenly with a spatula. Bake for 8-10 minutes, until the top is golden brown.
9.Repeat the process, spreading each layer of batter evenly on top of the previous one, until all the batter is used up.
10.Let the cake cool for 10 minutes before slicing and serving.
