Ingredients

6 ounces udon noodles
6 cups water
1 tablespoon olive oil
1/4 lb long beans or 1/4 lb green beans , sliced to 1 inch pieces
1 small carrot , sliced thin
3 large broccoli florets , bite size
1/2 zucchini , sliced
2 leeks , sliced thin ( white part ) or 1/2 white onion
1 can bamboo shoots , drained
1/4 cup rice wine vinegar
1/2 cup low sodium chicken broth
1/2 lb prawns , 40-51 count
Lapa's prawn, udon noodle stir fry is a delicious and healthy meal inspired by Asian cuisine. Instructions

1.Cook udon noodles in boiling water for 4-5 minutes, drain and set aside.
2.In a wok, heat olive oil over medium-high heat.
3.Add long beans and carrot, stir for a minute.
4.Add broccoli, zucchini, leeks and bamboo shoots, stir for another minute.
5.Add rice wine vinegar and chicken broth, bring to boil.
6.Add prawns and stir until they turn pink, for approximately 2-3 minutes.
7.Add cooked udon noodles and stir to combine with the vegetables.
8.Serve immediately.
