Ingredients

1 lb white fish fillet
2 tablespoons fish sauce
3 red chilies , seeded and finely chopped
1 1/2 teaspoons lemongrass , finely chopped , white part only
4 garlic cloves , crushed
3 spring onions , finely chopped
2 tablespoons coriander , fresh leaves , chopped
1 egg , beaten
2 tablespoons rice flour
oil , for frying
1 lemon , cut into wedges , to serve
Laotian Fish Balls, also known as 'ping gai,' are a popular street snack in Laos. Often eaten as a mid-day snack or served as an appetizer, these fish balls are crispy on the outside and soft on the inside with a spicy kick from the chilies. The blend of fresh herbs and aromatics in the fish balls make them a unique and flavorful dish. Traditionally deep-fried and served with lemon wedges and a sweet chili dipping sauce, Laotian Fish Balls are popular throughout Southeast Asia and are now gaining popularity all over the world.

Instructions

1.Rinse the fish fillet and cut it into small pieces.
2.Using a food processor, combine the fish, fish sauce, red chilies, lemongrass, crushed garlic, spring onions and coriander. Process until the mixture forms a paste.
3.Transfer the mixture to a mixing bowl. Add the beaten egg and rice flour. Knead until well combined.
4.Shape the mixture into small balls.
5.Fill a deep heavy pot with oil and heat it to 350°F (180°C).
6.Fry the fish balls for approximately 5 minutes, or until golden brown, turning occasionally.
7.Transfer the fish balls to a paper towel-lined plate to remove any excess oil.
8.Serve hot with lemon wedges for squeezing over the top.
