Ingredients

8 cups water
4 chicken thighs , skin removed
1 inch fresh galangal root , cut into thirds
1 inch fresh gingerroot , cut into thirds
1 tablespoon salt
fresh ground black pepper , to taste
1 tablespoon cooking oil
1 shallot , diced
2 garlic cloves , minced
2 tablespoons red curry paste
1 can coconut milk
2 tablespoons fish sauce
2 tablespoons sugar
1 package rice vermicelli ( not clear rice sticks )

Instructions

1.In a large pot, bring water to a boil and add chicken thighs, galangal root, gingerroot, salt, and black pepper.

3.Strain the stock and return to the pot.
4.Heat oil in a large skillet over medium heat. Add shallots, garlic, and red curry paste and sauté until fragrant, about 2 minutes.
5.Add this mixture to the pot along with the coconut milk, fish sauce, and sugar. Stir until well combined.
6.Cook the rice vermicelli according to package instructions, and divide among serving bowls.
