Ingredients

1 lb waxy potato
1/3 cup peanut oil or 1/3 cup canola oil
4 garlic cloves , smashed and sliced
4 whole dried red chilies , stem ends removed ( optional )
4 green onions , chopped
1/2 cup fresh fennel greens , chopped ( optional )
2 teaspoons hot Chinese chili paste ( or to taste ) ( optional )
1 teaspoon salt
Lao Nai Yang Yu, also known as spicy mashed potatoes, is a popular dish in Chinese cuisine. This dish is easy and quick to make, and it's filled with spicy flavors of Chinese chili paste, dried red chilies, and garlic. Instructions

1.Peel and cut the potatoes into small chunks.
2.Boil the potatoes until soft. Drain and mash them until there are no more lumps.
3.Heat up the oil in a wok or large skillet over medium-high heat. Add the garlic and stir-fry for 30 seconds.
4.Add the whole dried red chilies and stir-fry for 15 seconds. Add the green onions and fennel greens and stir-fry for another 30 seconds.
5.Add the hot Chinese chili paste and stir-fry for 15 seconds. Add the mashed potatoes and stir-fry for 2-3 minutes.
6.Add salt and continue stir-frying for another minute or until everything is combined, and the mashed potatoes are heated through.
