Ingredients

1 lb shrimp ( original recipe called for langoustines , but shrimp in thier shells is a good substitute )
2 tablespoons oil
1/2 onion , chopped
2 teaspoons curry powder
4 1/3 cups water
1 salmon head ( or fish pieces to make fish stock )
salt
pepper
2 carrots , cut into thin strips
4 tomatoes , seeded and chopped
1 bell pepper , seeded and cut into strips
9 ounces cream
1 dash Tabasco sauce
Langoustine soup is a popular dish in European countries like Spain, France, and Portugal. It's usually served as an appetizer or a light meal. Instructions

1.Clean the shrimp by removing the shells, head, and tail. Rinse under running water and pat dry with a paper towel.
2.Heat oil in a large pot over medium heat. Sauté onion and curry powder until onion is soft, about 5 minutes.
3.Add water and fish heads or fish pieces. Season with salt and pepper. Bring to a boil and let simmer for 30 minutes.
4.Remove fish heads or fish pieces. Strain the liquid and return it to the pot.
5.Add carrots, tomatoes, and bell pepper. Simmer for 10 minutes, or until the vegetables are soft.
6.Puree vegetables and soup in a blender until smooth.
7.Return the puree to the pot and add cream and Tabasco sauce. Simmer for another 10 minutes until heated through.
