Ingredients

24 eggs
2 onions , sliced
2 cups balsamic vinegar
4 cups water
4 tablespoons white sugar
20 cloves garlic , mashed into a paste
35 peppercorns
1/2 cup beet juice ( see Cook 's Note )
6 fresh green and red cayenne chiles , halved lengthwise
Lance's balsamic pickled eggs are a unique twist to the classic pickled eggs. The tangy and slightly sweet flavor of the balsamic vinegar pairs perfectly with the spicy kick of the cayenne chiles. Instructions

1.Start by boiling the eggs in a pot for 7-8 minutes or until hard boiled, then immediately transferring them to a bowl of ice water to cool. Once cooled, peel the eggs and set them aside.
2.In a large pot, combine balsamic vinegar, water, sugar, garlic, peppercorns, and beet juice. Bring the mixture to a boil over medium heat and then reduce the heat to low. Simmer for 10 minutes.
3.Add sliced onions and halved cayenne chiles to the pot and continue simmering for 5 minutes.
4.Remove the pot from heat and let the mixture cool for 10 minutes.
5.In a large container, layer the boiled eggs with the pickling mixture. Seal the container and refrigerate the eggs for at least 24 hours before serving.
