Ingredients

6 eggs
3/4 cup caster sugar
1 cup self raising flour
1/3 cup cornflour
1/3 cup hot water
3 teaspoons butter , melted
3 cups desiccated coconut
4 cups icing sugar
1/3 cup cocoa
3 teaspoons butter
1/2 cup milk
Lamingtons, also known as true blue Aussie lamos, are a popular dessert in Australia. They are small, sponge cake cubes coated with a chocolate icing and desiccated coconut flakes. These treats are perfect for any occasion; whether it's a backyard barbecue, school bake sale, or afternoon tea. Some people like to add jam, fruit, or cream in between the sponge layers for added taste. Lamingtons can be traced back to the early 1900s in Queensland, Australia, and were originally served as a way to use up stale cakes. They're so popular that Australia even dedicates a National Lamington Day each year on July 21.

Instructions

1.Preheat oven to 180°C and line a cake tin with butter paper.
2.Beat the eggs and caster sugar in a bowl until it becomes a fluffy mixture.
3.Sift the self-raising flour and cornflour together. Then add it to the egg-and-sugar mixture while simultaneously folding in the sifted flour.
4.After mixing the batter, add in hot water and melted butter, and mix them gently.
5.Pour the mixture into the prepared cake tin and bake for approximately 25–30 minutes or until golden brown.
6.Once it is baked, remove from the pan and allow it to cool completely.
7.Cut it into small squares and set aside on a tray.
8.For the icing, sift the icing sugar and cocoa powder together. Then, in a separate bowl, melt the butter, add the milk, and then stir in the icing sugar and cocoa mixture.
9.Place a piece of cake in the icing bowl with an ice cream stick and hold it from the stick. Cover each piece with icing and then roll it in a bowl of desiccated coconut.
10.Repeat until all squares have been frosted.
11.Leave the lamington pieces in the fridge to cool for a few minutes before serving.
