Lamingtons are a beloved Australian dessert, dating back over 100 years. Legend has it that they were created by accident when a cook in the Governor’s kitchen accidentally dropped a sponge cake into chocolate icing, then rolled it in coconut flakes to disguise the mistake. Today, Lamingtons are a staple in Australian bakeries and tea rooms, often served with a hot cup of tea or coffee. Their sweet chocolate-coconut flavor and soft, spongy texture make them a popular choice for those with a sweet tooth.

Instructions

.Preheat the oven to 350°F (175°C) and grease an 8-inch square cake pan with butter or cooking spray.
.In a medium bowl, whisk together the flour, baking powder, and salt.
.In another bowl, cream together the butter and sugar until light and fluffy, then add in the vanilla extract.
.Beat in the eggs one at a time, then stir in the milk.
.Gradually mix the dry ingredients into the wet ingredients, mixing until just combined.
.Pour the cake batter into the prepared pan and bake for 25-30 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
.Let the cake cool on a wire rack while you prepare the icing.
.In a large bowl, whisk together the confectioners’ sugar, sifted cocoa powder, melted butter, and warm milk until smooth.
.Spread the icing over the cooled cake, covering all sides evenly.
.Pour the shredded coconut onto a large plate or shallow dish and carefully roll the iced cake in the coconut, pressing lightly to ensure it sticks to the icing.
.Slice the cake into squares or rectangles, then serve and enjoy!
