Ingredients

18 laimgton sponge cake fingers ( see note above )
1/4 cup moist shredded coconut
240 g white chocolate , chopped
300 ml thickened cream
1 teaspoon gelatin
2 teaspoons cold water
250 g mascarpone cheese
125 g cream cheese
1/2 cup caster sugar
1 teaspoon vanilla extract
250 g dark chocolate , chopped
1/2 cup thickened cream
Combining two classic Australian treats, this indulgent lamington cheesecake slice is a true dessert delight. The lamington sponge fingers are a traditional Australian cake made from sponge cake, chocolate and coconut, while the creamy cheesecake filling and ganache topping add a touch of luxury to this dessert. Instructions

1.Grease a 20x30cm rectangular cake pan and line the base and sides with baking paper.
2.Arrange the lamington sponge fingers in a single layer over the base of the pan, trimming with a knife if necessary to fit.
3.Sprinkle with shredded coconut.
4.Melt white chocolate in a heatproof bowl over a saucepan of simmering water, stirring until smooth. Remove from heat.
5.Beat the thickened cream with an electric mixer until stiff peaks form.
6.Sprinkle gelatin over the cold water in a small bowl. Stand the bowl in a heatproof bowl of simmering water and stir until the gelatin dissolves. Remove from heat.
7.Beat mascarpone, cream cheese, sugar and vanilla together with an electric mixer until smooth. Beat in gelatin mixture.
8.Beat melted chocolate into the mascarpone mixture. Fold in the whipped cream until just combined.
9.Pour the mixture over the lamington fingers and smooth the top. Cover and refrigerate for 3 hours or until set.
10.Remove from the fridge and allow the cheesecake to come to room temperature.
11.Melt dark chocolate in a heatproof bowl over a saucepan of simmering water. Remove from heat and stir in the cream until smooth.
12.Drizzle the chocolate mixture over the cheesecake and use a spatula to spread it out evenly.
13.Return to the fridge until the chocolate is set. Serve and enjoy!
