1/2 vanilla bean
2 cups whole milk
2 tablespoons whole milk
1/3 1/3 cup bomba rice or 1/3 cup another short-grain rice
2 1/2 tablespoons sugar
1 2/3 cups heavy cream

Instructions

1.Using a sharp knife, split the half vanilla bean in half lengthwise, and scrape out the seeds with the back of the knife. Add the seeds and the pod to a medium saucepan along with the milk and 2 tablespoons of heavy cream.
2.Bring the milk to a boil over medium-high heat.
3.Add the rice and sugar to the pot, and reduce the heat to low.
4.Cook, stirring often, for about 25-30 minutes or until the rice is tender and the pudding is thick and creamy.
5.Remove the pot from the heat. Remove the vanilla bean pod and stir in the remaining heavy cream.
6.Spoon the pudding into individual serving dishes, and garnish with a sprinkle of cinnamon or a dollop of whipped cream, if desired.
