Ingredients

8 slices lamb necks
250 ml red wine ( Pinotage of course ! you can be liberal with this )
250 g new potatoes , chopped ( halved if small )
1 large onion , roughly chopped
2 red peppers , sliced
12 vine tomatoes , halved
1 1/2 teaspoons ground cloves
1 1/2 teaspoons ground cinnamon
2 teaspoons sweet paprika
3 cm fresh ginger , finely chopped
2 garlic cloves , crushed
1 tablespoon chopped fresh coriander
3 tablespoons vegetable oil
Lamb's Neck Potjiekos is a traditional South African stew that is cooked outdoors in a cast-iron pot over an open flame. This recipe is a simplified version that can be made indoors, on a stove top, using a regular pot. Instructions

1.Heat a cast-iron pot over medium-high heat and add the vegetable oil.
2.Brown the lamb necks in the oil in batches, removing them from the pot and setting them aside on a plate as you work.
3.Add the onions and peppers to the pot and cook for 4-5 minutes or until softened.
4.Add the garlic and ginger to the pot and stir for about a minute.
5.Add the potatoes, tomatoes, spices, and coriander to the pot.
6.Pour in the red wine and give everything a good stir.
7.Reduce the heat to a low simmer and put the lamb neck slices back into the pot.
8.Cover with a lid and cook on low heat for 3 hours or until the lamb is meltingly tender.
9.Make sure you don't stir the pot or lift the lid during this time.
