Ingredients

1 rack of lamb , about 1-1/2 pounds , backbone removed , trimmed , and frenched ( the butcher will do that for you )
2 tablespoons Dijon mustard
2 teaspoons chopped fresh rosemary
salt
freshly ground black pepper
1/3 cup fresh dry whole wheat breadcrumbs
4 cloves garlic , minced
3 tablespoons chopped , fresh flat leaf parsley
1 tablespoon olive oil ( amount is approximate )
1 cup merlot
2 tablespoons unsalted butter
Lamb with Merlot-Butter Sauce is an elegant and delicious main dish that is perfect for a special occasion or a dinner party. The meat is seasoned with fresh rosemary and Dijon mustard, then coated with a breadcrumb mixture for added texture and flavor. Instructions

1.Preheat the oven to 400°F (200°C).
2.Season the lamb with salt and pepper to taste and spread mustard all over the meaty parts of the rack.
3.Sprinkle the rosemary over the mustard.
4.Mix the breadcrumbs, garlic, parsley, and olive oil in a small bowl. Press the mixture onto the mustard and rosemary, covering the meaty parts of the lamb.
5.Place the lamb on a rack in a roasting pan with the fatty side up. Roast for about 25 to 30 minutes, or until the internal temperature of the meat registers 125°F (51°C) for medium-rare.
6.Remove the lamb from the oven and let it rest for about 10 minutes.
7.In a small saucepan, bring the merlot to a boil and reduce to about 1/4 cup.
8.Take the pan off the heat and whisk in the butter, one tablespoon at a time until fully incorporated. Pour the sauce over the lamb and serve.
