Ingredients

4 lean lamb steaks
1 lemon , juice and rind of , grated
1/2 tablespoon rosemary , chopped
1/2 tablespoon sage , chopped
2 garlic cloves , crushed
2 slices smoked back bacon , lean bacon is preferable , chopped
2 onions , sliced
1 carrot , finely chopped
250 g green lentils or 250 g puy lentils
450 ml vegetable stock
This hearty and delicious dish is perfect for a cozy dinner at home. The tender lamb steaks pair perfectly with the earthy flavours of the braised lentils. Instructions

1.Preheat the oven to 150°C (300°F).
2.Combine lemon juice and zest, rosemary, sage and garlic in a bowl. Rub the mixture over the lamb steaks and let it rest for a while.
3.In a pan, cook the bacon until brown. Add onions and carrot and cook them for 5 minutes until soft.
4.Then, add the lentils and stock to the pan and stir it well. Cover and bake in the oven for 1 hour until the lentils are tender.
5.Meanwhile, heat a grill or frying pan to high temperature. Cook lamb steaks for 2-3 minutes on each side for a medium-rare finish. Once done, let it rest for a while before slicing it thinly.
6.Serve lamb steaks on top of the braised lentils and serve warm.
