2 lbs lamb , in 1 1nch cubes ( lean , I use loin )
1/4 cup olive oil
4 garlic cloves , whole and peeled
1 cup dry white wine
2 cups tomatoes , seeded and chopped
1 teaspoon salt ( to taste )
1/2 teaspoon white pepper ( to taste )
boiling water , as needed

Instructions
