Ingredients

1 racks of lamb , bones removed ( lamb tenderloin )
sea salt , to taste
pepper , to taste
1/2 teaspoon olive oil
1 potato , peeled , washed and grated
1/4 onion , washed and grated
1 teaspoon flour
1 garlic cloves , chopped or 1/8 teaspoon garlic powder
1 egg
2 tablespoons heavy cream
1 teaspoon parsley , chopped
1/2 teaspoon sea salt
pepper , to taste
1/2 tablespoon butter or 1/2 tablespoon olive oil
lamb bone
1/3 onion , peeled & sliced
1/3 carrot , peeled & sliced
1 teaspoon flour
1/2 cup water
1/4 cup white wine or 1/4 cup port wine
1 bunch fresh thyme
2 teaspoons butter
sea salt , to taste
pepper , to taste
Lamb Tenderloin and Garlic Potato Cakes is a classic European dish enjoyed across several countries. Tender and juicy, the lamb tenderloin is coated with basic seasoning and seared on high heat for a crisp exterior. Instructions

1.Season the lamb tenderloin with salt and pepper.
2.Heat the olive oil in a skillet over high heat. Sear the tenderloin until browned on all sides, about 2-3 minutes per side.
3.Transfer the lamb to a baking sheet and bake in a preheated oven for 8-10 minutes at 400°F for medium-rare doneness.
4.In a large bowl, combine the grated potato, onion, flour, garlic, egg, heavy cream, parsley, salt, and pepper. Mix well.
5.Heat the butter or olive oil in a skillet over medium-high heat.
6.Scoop 1/4 cup of potato mixture and flatten it into a pancake about 1/2 inch thick.
7.Carefully place the pancake into the skillet and cook for 2-3 minutes on each side until golden brown and crispy.
8.Preheat a saucepan over medium-high heat and sauté the sliced onion and carrot in it until softened and translucent.
9.Add the lamb bone, flour, and water. Adjust the heat and let the mixture simmer until it gets reduced to about half.
10.Pour the white wine or port wine into the pan followed by thyme leaves, 2 teaspoons of butter and bring it to a simmer for about 5-10 minutes until the sauce thickens to your likings, season with salt and pepper.
11.Remove the lamb tenderloin from the oven and let it rest for 5 minutes before slicing.
12.Serve the sliced lamb with the garlic potato cakes and lamb jus on the side.
