Ingredients

2 lbs lamb , cut into 1 inch cubes
2 tablespoons flour
2 -3 tablespoons olive oil or 2 -3 tablespoons walnut oil
3 red onions , very thinly and vertically sliced
1 carrot , thinly sliced
4 stalks celery , thinly sliced
4 garlic cloves , finely minced
2 tablespoons fresh ginger , finely minced
1 cinnamon stick
2 teaspoons ground cumin
2 teaspoons turmeric
2 teaspoons ground allspice
1 cup walnuts , toasted then chopped
2 bay leaves
2 1/2 cups pomegranate juice
1 cup chicken broth
2 pomegranates , juiced and seeded
1/4 cup honey
2 limes , juice of
2 cups fresh cilantro , roughly chopped

Instructions

1.Preheat the oven to 325°F (165°C).

4.Add the lamb in batches, cooking until brown on all sides. Remove the cooked lamb and set aside.
5.Add the onions, carrot, and celery to the same dutch oven and saute for 5-7 minutes until softened.
6.Add the garlic and ginger and cook for an additional 2 minutes.
7.Add the cinnamon, cumin, turmeric, allspice, walnuts, bay leaves, pomegranate juice, chicken broth, pomegranate seeds, honey, and lime juice to the dutch oven. Stir to combine.
8.Add the cooked lamb back into the dutch oven and bring the mixture to a boil.
9.Cover the dutch oven with a tight-fitting lid and place it in the preheated oven for 2 1/2 to 3 hours, or until the lamb is tender.
10.Remove the dutch oven from the oven and let it sit for 5-10 minutes before serving.
