9 cups chopped onions , divided ( sweet onions such a Vidalia or Maui , about 3 pounds )
3 lbs boneless lamb stew meat , cut into 3/4-1 inch pieces
2 cups water
2 cinnamon sticks
1 teaspoon ground cinnamon
1 teaspoon salt
1 teaspoon fresh coarse ground black pepper
1 teaspoon ground ginger
1/8 teaspoon saffron thread ( crumbled )
4 cups plum tomatoes , chopped ( about 1 1/2 pounds )
4 tablespoons fresh Italian parsley , chopped and divided
1/4 cup olive oil

Instructions

1.Preheat oven to 350°F (175°C).
2.In a large bowl, add olive oil, 3 cups of onions, 2 cinnamon sticks, 1 teaspoon of ground cinnamon, ginger, saffron, salt and pepper; mix well.
3.In a large pot over high heat, sear the lamb until it turns brown on all sides, sprinkle onions, add water and stir well to mix all ingredients, then cover the pot with a lid and let it cook for 30 minutes.
4.Remove the lid and add the remaining 6 cups of onions and tomatoes to the pot, then put the pot in the oven and bake for an additional 2 hours.
5.When the dish is done, discard the cinnamon sticks and sprinkle with fresh chopped parsley before serving.
