Ingredients

1 1/2 kg lamb shanks , sawn into 2 . 5 cm pieces
3 medium onions , grated
1 tablespoon ras el hanout spice mix , more to taste
salt & freshly ground black pepper
1 tablespoon butter
1 pinch saffron ( about 12 threads )
1 cinnamon stick
1 teaspoon olive oil
1 teaspoon butter
2 onions , sliced
2 teaspoons sugar
1/2 cup canned chopped tomato
1 cup canned chick-peas , drained and rinsed
3 cups pumpkin or 3 cups butternut squash , chunks
3/4 cup pitted prune , halved
pita bread or lavash bread , to serve

Instructions

1.In a large bowl, mix together the lamb shanks, grated onions, ras el hanout spice blend, salt and freshly ground black pepper.
2.Melt the butter in a large tagine or Dutch oven over medium heat.
3.Add the lamb to the pot and cook until browned on all sides, about 5 minutes.
4.Add the saffron, cinnamon stick, olive oil, sliced onions, and sugar to the pot.
5.Cook for about 10 minutes or until the onions are golden brown.
6.Add the canned tomatoes, chickpeas, pumpkin or butternut squash, and prunes to the pot.
7.Add enough water to cover the ingredients and bring to a simmer.
8.Cover and cook on low for 1.5 hours or until the lamb is tender and the sauce has thickened.
9.Serve hot with pita or lavash bread for dipping into the delicious sauce.
