Ingredients

4 tablespoons vegetable oil
3 lbs boneless lamb shoulder , trimmed of excess fat and cut into 1 1/4-inch pieces
6 tablespoons unsalted butter
1/4 teaspoon saffron thread , crushed in you fingers
1/2 teaspoon ground cinnamon
1/2 teaspoon fresh ground black pepper
1/2 teaspoon ground turmeric
1/8 teaspoon cayenne
1 1/2 teaspoons grated gingerroot
1 small yellow onion , minced
1 1/2 teaspoons kosher salt
5 cups water
5 sprigs coriander ( plus extra leaves for garnish )
1 medium sweet onion , peeled , cut in half , and sliced 3/8 inch thick ( Vidalia onion )
1/2 cup blanched roasted almonds
1 butternut squash
3 tablespoons honey
16 dried apricots , soaked in warm water until soft , and cut in half
Lamb tagine with butternut squash, dried apricots, and almonds is a classic Moroccan dish that is widely enjoyed all over the world. Instructions

1.Preheat the oven to 350°F.
2.Heat the vegetable oil in a large Dutch oven over medium-high heat. Brown the lamb in batches for 5 minutes per batch.
3.In the same pot, melt the butter and add in the saffron, cinnamon, black pepper, turmeric, cayenne, gingerroot, and yellow onion. Cook until the onion is soft.
4.Return the lamb to the pot and add in the kosher salt, water, and coriander sprigs. Cover the pot and bring to a boil.
5.Turn off the heat and transfer the pot to the oven. Bake for 1 1/2 hours.
6.Remove the pot from the oven and add in the sweet onion, almonds, butternut squash, and honey. Bake for another 30 minutes.
7.Add in the dried apricots and bake for another 15 minutes.
