Ingredients

1 tablespoon olive oil
2 medium onions , finely diced
1 lb ground lamb
2 scallions , minced ( white part only )
2 garlic cloves , minced
1 tablespoon of fresh mint , minced
1 1/2 teaspoons salt
1/2 teaspoon ground pepper
2 cups plain yogurt
1/2 teaspoon cayenne pepper
1 tablespoon finely chopped of fresh mint
salt and pepper , to taste

Instructions

1.Heat a skillet over medium-high heat and add olive oil. Add diced onions to the pan and cook for 3-4 minutes or until onions are soft.
2.Add ground lamb to the pan and cook for 5-6 minutes or until the lamb is browned. Stir occasionally. Drain any excess fat.
3.Add minced scallions, minced garlic, fresh mint, salt, and pepper to the pan and stir. Cook for an additional 2-3 minutes. Remove from heat and set aside.
4.In a separate bowl, mix together plain yogurt, cayenne pepper, chopped mint, salt, and pepper.
5.Preheat grill to medium-high heat. Divide the lamb mixture into eight portions. Take each portion and mold it around a skewer, pressing the lamb mixture into a log shape. Repeat until all lamb mixture has been used.
6.Grill skewers for 3-4 minutes per side, or until the lamb is cooked through.
7.Serve lamb skewers with spicy yogurt dressing on the side.
