Ingredients

3/4 lb fresh spinach
2 tablespoons olive oil
1/4 cup pine nuts
1 small onion , finely chopped
1 garlic clove , minced ( or pressed )
1/2 teaspoon dry oregano leaves
fresh coarse ground black pepper
1/2 cup soft breadcrumbs
4 - 4 1/2 lbs lamb shoulder , boned

This lamb shoulder roast recipe with spinach and pine nuts stuffing is a must-try. Instructions

1.Preheat oven to 425 degrees F.
2.In a large skillet, heat olive oil, and toast pine nuts stirring occasionally until golden brown.
3.Add onions and garlic to skillet, cook for 3-4 minutes, allow onions to turn translucent.
4.Add in oregano and spinach and continue to stir until wilted thoroughly.
5.Remove skillet from heat and then mix in the breadcrumbs. Add salt and black pepper to season.
6.Season the lamb with salt, black pepper as desired.
7.Place the lamb in a roasting pan, then cover the lamb evenly with the spinach mixture.
8.Roast lamb in the oven for 15 minutes on high heat, then reduce the heat to 350 degrees F.
9.Continue to roast for 1 ½ hours or until the lamb has been cooked to your liking.
10.Allow the lamb to rest for about 10 minutes before carving. Serve and enjoy!
