Ingredients

2 tablespoons olive oil
4 lamb shanks
1 onion , chopped
2 cloves garlic , minced
2 dried ancho chiles - chopped , stemmed and seeded
2 cups chicken broth
4 cups tomato puree
1 teaspoon ground cumin
1 bay leaf
salt and pepper to taste
6 dried ancho chiles , stemmed and seeded
4 cups boiling water
1/2 cup honey
1 teaspoon grated orange zest
1 cup plain yogurt
2 tablespoons chopped fresh cilantro
salt to taste

Instructions

1.Heat oven to 375F. In a dutch oven, heat olive oil on medium heat.
2.Rub lamb shanks with salt and pepper, then add to the pan and brown for 4-5 mins on each side.
3.Remove the lamb from the pan and set aside.
4.In the same pan, sauté onions and garlic until soft and fragrant.
5.Add the chopped Ancho Chile, cumin, bay leaf, tomato puree, chicken broth and lamb shanks to the pan.
6.Bring to a boil, then lower the heat and let it simmer for 10 mins.
7.Place the dutch oven in the oven and bake for around 2 hours.
8.While the lamb is baking, let the 6 Ancho chiles soak in 4 cups of boiling water for around 30 mins.
9.Strain and puree the soaked chiles in a blender
10.Add honey and orange zest to the puree and blend.
11.Add salt and pepper to taste.
12.Baste the lamb with the Ancho Chile Honey Glaze every 10-15 mins during the last 30 mins of cooking.
13.Serve the lamb hot with plain yogurt and fresh cilantro on top.
