Ingredients

2 lamb shanks
2 tablespoons olive oil
1 large onion , peeled and roughly chopped
4 garlic cloves , peeled and finely chopped
1 teaspoon cumin
1 teaspoon ground ginger
1 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 lemon , juice and zest of
1 tablespoon olive oil
14 prunes , eg.Whitworth 's Ready to Eat
2 tablespoons honey
2 teaspoons cornflour ( optional )
toasted almonds ( to garnish ) or chopped coriander ( to garnish )
Lamb Shanks in Honeyed Prune Sauce is a classic Middle Eastern and North African dish that has been enjoyed for centuries. The tender lamb shanks are slow-cooked in a spiced sauce of prunes, honey, and aromatics until they are meltingly tender and bursting with flavor. It's a great dish to serve for special occasions or when you're in the mood for a hearty and comforting meal.

Instructions

1.Preheat the oven to 170C / fan 150C / gas 3.
2.Heat 2 tbsp olive oil in a large ovenproof casserole dish or a frying pan.
3.Brown the lamb shanks all over, remove from the pan and leave to one side.
4.Add the onion to the same pan and cook for 5 minutes or until the onions soften, stirring often.
5.Add the garlic and spices and cook for a further 2 minutes.
6.Return the lamb shanks to the pan/dish, coat with the onion and spice mixture.
7.Add the lemon zest, juice, prunes, honey, and 1/2 cup of water.
8.Cover and place in the oven and cook for 2 hours 30 minutes, or until the meat is very tender.
9.Remove the lamb shanks from the dish and keep warm.
10.Strain the cooking liquid into a saucepan and boil for a minute or two to reduce the sauce and thicken it if needed.
11.Plate the lamb shanks and spoon the prune sauce over them.
12.Optionally, garnish with toasted almonds or chopped coriander and serve alongside a side dish of your choice.
