Ingredients

1 tablespoon oil
4 lamb shanks
2 onions , diced
6 garlic cloves , crushed
6 cups chicken stock
3 potatoes , peeled and quartered
1 can whole canned tomatoes , undrained
1 can brown lentils , undrained
500 g butternut pumpkin , cubed
1 teaspoon dried thyme
salt , to taste
fresh ground pepper , to taste
2 tablespoons fresh parsley , chopped , for garnish
4 crusty rolls , to serve

Instructions

1.Heat the oil in a large pot or Dutch oven over medium-high heat.

5.Bring to a boil then reduce heat to low, cover and simmer for 2-3 hours or until the lamb is tender and falling off the bone.
6.Remove the lamb shanks from the pot and shred the meat.
7.Return the meat to the pot and stir.
8.Ladle the soup into bowls, sprinkle with parsley, and serve with crusty rolls.
